In France, pig slaughter increased slightly in volume despite the continued contraction of the pig herd, according to the August 2026 economic outlook from FranceAgriMer.
Over the twelve rolling months to the end of July 2026, French slaughter increased by 0.6% in volume, while the number of head remained stable, compared to the previous twelve months.

This development contrasts with that of the pig herd which, according to the SSP survey data from November 2025, declined by 0.6%, with a more marked decrease in the number of sows (-2.5%).
According to FranceAgriMer, this situation is explained in particular by productivity gains on farms, with an increase in the number of piglets per sow, as well as by a rise in the average carcass weight. This weight increased by an average of 0.5 kg during the first seven months of 2026 compared to the same period in 2025.
